睇左10分鐘整左個咁既死樣

Sudden inspiration

三分鐘  豆腐變蛋糕

My father showed me this video this morning (he never buy newspaper just check 蘋果動新聞 everyday), reminds me we can do a "soft marketing" approach. Let's say we have our cafe opened we can establish our own blog; send out press release or volunteer as one of the blog writer (if there's any f&b blog famous in hk) so we kinda upload receipes/tutorial to the blog not necessarily stating our cafe's name, just like those bloggers in she.com . I know it's kinda early to talk abt this but just wanna share this with you guys when I still remember LOL

鏗鏘集 3月7日.

Talks abt operation of 2 different Michelin 1-star restaurant , the difficulties of maintaining quality and the change after opening a branch. Dunno if I can find a seed will put it on here if I can find one. I think it's gd for obtaining experience and stuff.

It is pretty much all about the location,

How and what to do the research on location

First we should narrow it down to a couple of locations, and then do data collection continuously.

On rent, target customers, flow of customers, competitors
  • field experience
  • online (地產, openrice)
so far those are the things I could think about, probably when I started it more will come.

Lets start with 九龍灣 and 觀塘 first.

  • 佢係咖啡店, 攻D番工人, 人流好緊要
  • 成棟寫字樓棟O係對面同樓上
  • 租真係堅平
  • 同一條街15蚊一呎租 2000呎3萬, 我估佢個位應該會貴DD(20-30)  source: 中原工商鋪 2010 June
  • 主打咖啡, 有個牛角包, 都係40蚊 行高級路線唔算太貴, 你starbucks 一杯糖水都要30啦
  • 飲慣左starbucks, 即溶....突然飲一杯好咖啡個反差太犀利, 一定留得到客
  • 飲過一杯好咖啡永遠會記得係點 (我係咁=p)
  • 如果我地係要用野食/蛋糕, 個impact一定冇咁大
  • 感覺上唔會有太多人坐死O係度, 應該係飲完就番去開工咁 風格上同我想要有D唔同, 不過如果位置O岩早餐可以咁做
  • 開業四個月已收支平衡, 佢係唔係痴線
  • 七十五萬裝修和設置爐具 (budget 度可以留意)
  • 好鬼亂!

用心調校港人口味 工廠區咖啡店休閒之選





 
擁有十年管理咖啡店經驗的Jonathan,回流返港開設首間工廠區咖啡店,更自家烘焙咖啡豆,調校港人口味,同時他正研製各種日式美食,為上班一族提供舒適休閒的好地方。

九龍灣工廠區商業大廈林立,卻傳來陣陣咖啡香。上班一族都不禁停下腳步,呷一口咖啡,迎接醒神的一天。曾勇奪英國Starbucks Coffee Master比賽亞軍的Jonathan,十多歲到英國留學,對咖啡一試即愛,大學時期更在倫敦大大小小的咖啡店工作,畢業後決定投身咖啡界,至今已有十年沖咖啡和管理咖啡店的經驗。前年他回流返港,開設首間工廠區咖啡店,化身咖啡王子,將他在倫敦感受到的咖啡文化帶給香港人。

店舖設計營造家鄉感
「喝咖啡不一定要像陳豪般『來一杯Espresso』才叫懂得喝咖啡,反而一杯合心意的咖啡才是享受。」店內所用的咖啡以厄瓜多爾、巴布亞新畿內亞、埃塞俄比亞以及墨西哥四個地方的咖啡豆混合烘焙而成。Jonathan每天都會自己烘焙咖啡豆,調校適合香港人的口味,沖出的咖啡濃郁甘香,再配上港產十字牌鮮奶,入口感覺比一般連鎖咖啡店出品的香滑。他也會因應客人的口味混合咖啡豆,即時放進機中炒製,讓客人可以嚐到稱心滿意的咖啡

Jonathan雖有多年管理咖啡店的經驗,但創業還是第一次,他看中工廠區地段租金較中環、銅鑼灣等地區便宜,鄰近有五幢商業大廈,接近二百多家公司,單是上班族已有足夠客源。「附近的商業大廈主要是國際貿易公司,有不少外國人士上班,他們習慣每日喝一杯咖啡,店鋪的出現就令他們有一種回家的感覺。

店內設計更是花盡心思,Jonathan與兩名拍檔合資約七十五萬裝修和設置爐具,「不少大型連鎖咖啡店裝修都比較男性化和黑沉沉,但我想打造的咖啡店則較女性化,務求讓客人有回家的舒適感覺。而店鋪也設有在外國十分流行的咖啡吧檯,讓一眾外國客人可以一邊站?喝咖啡,一邊聊天,勾起家鄉生活感覺。」

特色食品帶出好滋味
除了濃郁的咖啡外,店鋪也供應日式招牌菜。Jonathan於日本咖喱飯加入咖啡,味道香口不辣,更帶出煙燻焦香味道。他同時推介粟米牛奶湯,粟米蓉加入牛奶中,入口又滑又甜,配上法國入口的牛角包,是不少客人早餐或下午茶之選。

店鋪愈做愈旺,開業四個月已收支平衡,人均消費約三、四十元,也有一群上班族熟客,每天都會前來購買一杯咖啡提提神,店鋪也將會多放置數張桌子以應付午餐人潮。採訪當日正值上班族午飯時間,全店滿座,咖啡香味不斷傳來;人潮過後,也有不少上班族忙裏偷閒,前來購買一杯咖啡回公司,自製享受咖啡好時光。

此外,Jonathan目前正研製迎合節日的小食,如剛過去的聖誕節,薑餅人餅乾就比他預期售出的數目超出十倍,反應熱烈。而即將來臨的農曆新年和情人節就會推出餅乾和朱古力,讓客人在忙碌的上班生活中,除享受自家製咖啡外,更可細味另一份滋味。

創業秘笈
近年連鎖咖啡店開得成行成市,幾條街中總有一間。香港市場學會主席嚴啟明認為,Bespoke咖啡店擁有自家特色,與倒模式的大型連鎖咖啡店截然不同,相信發展空間極大,而且於工廠區地段開店,同業競爭較少,是十分明智的選擇。「只做鄰近的商業大廈生意就已經足夠,因為在寫字樓上班的人都喜歡喝咖啡,而且懂得享受,舒適的環境也提供他們一個適合洽談生意的地方。」

嚴啟明表示,要長做長有,與客人保持密切關係是關鍵所在。「店鋪主要的客源是附近數幢商業大廈,賣廣告未必奏效,反而與客人多溝通,了解他們所需,建立良好關係,生意自然愈做愈旺。」要吸引更多生客,他建議,店鋪要有招牌菜式或飲品,凸顯咖啡店的形象,令客人有深刻印象,繼而推介親朋戚友。

More on location

Summing up the previous posts.

  • can reputation and promotion get around the problem of location?
2 cases here:

1. 旺位, 有人流
  • 貴租  (Q1. 其實有幾貴)
  • 可能要做到死先交到租
  • 即係要間野大D, 先有多D人食
  • 可能就算多人都係蝕
  • 蝕唔夠幾個月就玩唔到
In conclusion , this is gambling. 定係我太悲觀

2. 一個爛位
  • 可能係樓上
  • 可能係工廠
  • 一開冇人知
  • openrice/facebook 做promote
  • 靠word of mouth
  • 租冇咁貴, 就算開頭蝕都頂到一陣 (Q2. 同貴租差幾遠)
  • 冇咁忙, 唔駛賣埋早餐
我個人比較prefer lee個, 我堅信D野好就點都有人黎

First entry in Feb

Hey happy new year for everyone.

Had been quite a bit of time since the last one, I was lazy, =p.

Been reviewing the entries in Jan, we got like 16 of them at least, was quite an achievement , from the previous experience. like stopped from the second? LOL

Just hang in there and dun give up!

Is there any more systematic way we would make this progress?
kinda feel like we were sketching and there weren't a real starting and ending point.

btw, I agreed with cash's comment on the last post, life can be just as easy as that, sunshine, good book, good coffee. building a little place that could peel of the pressure, enjoy your life(as least for that moment) would be something very ideal.

So here comes the second question, is there any way we could achieve this, in a more practical way? Such as transform that thought to a theme or sth like that.

Actually I donno what I am saying, =p.

The ideal cafe

What's your ideal cafe. I need some ideas!

For me

  • Not being disturbed (such as someone talk reli loud on the next table, but then sometimes we did that) 
    • this could be further discuss, like when you were in a high-class restaurant, you know how to behave cause by the environment.
    • but this is preferences right?
  • Food doesn't need to be top class, but unique. And personally I hate mixing japanese, thai, italian, chinese in the same place unless it is buffet.
  • Dessert should be simple n simple, and the dessert menu should make you just want to try a bit of everything.
  • A comfortable chair, relaxing
  • Some friends, haha, can we provide that in ours?

Random idea

TOPIC: Make little changes on everything, it makes a big difference. <---probably that should be the mind set for thinking everything

If we kinda think a little bit step further on everything, take a little bit more of good care, then we will be better than others.

For example on the menu, we could add a little bit of fun facts of our dishes ,it was not like putting what were the ingredients, but more like putting a cooking tips, funny history etc, just make it more interesting when ppl was reading.

RE: USP

very simple things could become a USP.

I've seen somewhere that a fish n' chips shop using "healthy and fresh" as their USP.
100% vegetable oil and fresh (as opposed to frozen) fish.... but i can imagine his costs for fishies would be high as a rocket. The owner also runs a seafood shop across the road though.

USP could be as simple as that.

another very successful example there's a place called "Ibuki House" in Melbourne.
it's a japanese 私房菜. $50 (HKD400) per head. Ibuki-san used his own garage for his customers.
Lately he earned so much he has 2 restaurants now and one of them is located in a hotel.

another even more successful example is "Tempura Hajime"
They only serve 12, yes, twelve, customers per night. Fixed menu and something like $75 (HKD600) per head.
Bookings essential and restaurant is run by 2 people. The chef and his wife.
The tempura is so good that there's not a single drop of oil on the grease paper for every tempura dish.

What about a 私房cafe?
Book your room and there's nobody else disturbing you. Perfect peace and place for your group of friends. You get excellent food and the menu changes weekly with a different theme and you don't need to fight over the boardgames with another group of guys.
Just joking.... doing that we won't have enough customers to make a profit...
